    If I may weigh in here. Without ever having tried it, it just seems to me that pressure cooking veggies is like fishing with hand grenades.

    I don't think I'd even consider it unless I was wanting to do at least a pound of taters and/or carrots. And even then I'd do it without any weights on the steam vent.

    All of that assumes that you're cooking for immediate consumption. Canning is a whole other discussion.

    Not sure just how long you are pressure cooking your vegi's,
    an hour is way tooooo long ! LOL ! No wonder you are
    ending up with mashed "Pocarrots" I also prefer them al dente.
    Just a minute or two is all that is necessary. Also, do not cut
    the vegi's in too small of pieces. "Chunky" cut pieces or the
    whole vegetable should be the preferred size to steam. Let me
    know how you do with these suggestions, oh great "pressure
    steamer of the range" !

    Let us open our Holy Hand Grenade Book of Pressure Cooking and turn to the Epistle of Saint Julia Childs wherein it is written that "Only the most rotund of veggies (whole artichokes, potatoes, beets ... and therein and likewise) shall be allowed to cook for 15 minutes. And 15 minutes shall be the maximum cooking time, and the maximum time for cooking shall be 15 minutes. Neither shalt thou cook for more than 15 minutes unless thine veggies be reduced to mush and rendered unto soup ingredients. Fifteen minutes shall be the cooking time and the cooking time shall be 15 minutes. Sixteen minutes is acceptable if you have loose dentures. SEVENTEEN MINUTES IS RIGHT OUT!!!"

    Someone has been in the pressure cooker (gas flames on HIGH)

    by the way....... are we actually supposed to take the pressure cookers off the shelf and use them? Shoot I thought they were there for dusting practice.
    Do we have to accept what life hands us? Or can we say no thank you and ask for a different flavor?

    Ms. Pan, is not only a great kitchen Pan (sorry Peter), she is also my favorite Child (sorry Julia) (who never grew up), not to mention my food heretic of choice.

    When I want hell fire and cayenne, I refer to the Book of Bob.

    And JD takes more of a peaceful Ghandi approach -- she just lets is be. She uses no pressure whatsoever.

    Actually, I think we're all in agreement about how we like out veggies to turn out, not overcooked. It's just that in the pressure cooker, if I don't need to worry about getting it hot enough to hiss, then I ain't got a pot to hiss in.

    Re: the "Book of Bob" and cayenne pepper, must admit that I even use
    cayenne in scrambled eggs, sooooo invigorating !

    Ms. Childs used to be my favorite to watch on tv... she didn't BAM it all around like Emeril...

    No pressure cookers in this house, just my head when I get angry. It's the IRISH!

    Actually veggies sound good right about now, Bob, I believe Ms. Childs was right!

    irishrose has just surfaced ONCE AGAIN !!!

    There was some gossip circulating that she was out hunting gators
    (an overpopulation issue) in the Florida bog lands. As it turns out
    the rumors were unfounded but why then has she just opened a
    family restaurant featuring batter dipped gator wings ?
