I have experimented a little with underpaint in ArtRage. I will here mention two of the methods I have found - not exactly a tutorial, but feel free to experiment yourself. As I have NO experience from real world underpaint I don't know if it works the same. This is just my adoption.

The basic idea is to split painting in two layers. In one layer I do the tonal values using only grays (monochrome painting / luminance).
In another layer I do color (the combination of Hue and Saturation). The colors are usually painted with Luminance fixed at 50%.
And then I let the paper texture come from a third layer.

Method 1 (Hard Light):
Top layer is the monochrome layer. Blend mode is set to Hard Light. Paper is Coarse Weave.
Middle layer is the color layer. Normal blend mode. Paper is Coarse Weave.
Lower layer is the texture layer. Paper is Coarse Weave with 81% Roughness, scale 36% and 5% Metal.

Method 2 (Overlay):
Top layer is the color layer. Blend mode is set to Overlay. Paper is Coarse Weave.
Middle layer is the monochrome layer. Normal blend mode. Paper is Coarse Weave.
Lower layer is the texture layer. Paper is Coarse Weave with 81% Roughness, scale 36% and 5% Metal.

Note: Sometimes I notice a difference between the two methods. This will especially happen if I do not fix the luminance of the color layer to 50% - or if I add color to the monochrome layer, e.g. painting in sepia.

I think he did a good job explaining the method. It's an article about photoshop, but since the mergemodes are identical it works in ArtRage too.
